One of our absolute favorite fall backs. Always delicious and very versatile. Below I have it pictured with pasta, but you can do the tomato mixture on fish, vegetables, ( we love it with fresh zucchini noodles) - also you can change up the fresh basil for cilantro and serve with chicken. Really goes with everything. Eggplant, sausage etc.
This is probably the simplest dish that we have in regular rotation. Don’t let the simplicity fool you. Absolutely bursting with flavor. Sprinkle some crushed red pepper on there and Bob’s your uncle.
I would say no less than three cartons of cherry/grape tomatoes. I usually throw in one container of the wild variety of mixed tomatoes just for color. Really It’s anything that you’d like.
Preheat oven to 375 degrees
In a large bowl, toss tomatoes with extra-virgin olive oil, tons of garlic, one or two sliced up vidalia onions, Salt, pepper, more garlic and a little squeeze of lemon if you have it.
Bake until the tomatoes start to char and pop open. Some Times it could take upwards of an hour. Let it keep going it’s worth it to get that char. Perhaps the broiler if you’re tired of waiting. Toss with whatever you’d like. Enjoy!
Oh! Good with fresh mozzarella, Burrata, or crumbled feta!
